Yummy tortilla with Garlic Ground Beef Filling.

Hubby and I LOVE flavorful food; though I think I’m more the foodie than he is. See below for two of our favorite fillings along with a link to the best tortilla recipe ever.

N.B. If any of these recipes contain ingredients that you know trigger your migraines, substitute where possible. Also read the ingredient list on packaged items e.g. flour to ensure they have no migraine triggers or hidden MSG.

Mango Curry Chicken Filling

2 Chicken Breasts
Olive Oil (Olives are thought to be a migraine trigger: 27 Foods That Trigger Migraine)
2 Teaspoons of Curry Powder (Read the ingredient list to be sure there are no migraine triggers in it.)
2 Tablespoons of Water
Salt and Black Pepper to taste
3 Garlic Cloves (crush the garlic before mincing)
2 Tablespoons of Spring Onions
1/2 Large Red Bell Pepper
1 Stick of Celery
1 Corn on the Cob (optional)
1 Large Mango (not the hairy ones)
1 Small Scotch Bonnet or 1/2 of a medium one WARNING: This pepper is VERY HOT. Use only if you like and/or can tolerate spicy food. If you’ve never used this before, use less than what I suggest for the first time. Also note, if your mouth is burning as a result of hot pepper drink a glass of milk (Be sure there’s no hidden MSG in it).

  1. Season your chicken with salt and black pepper to taste (This can be done the night before for better flavor). Cook and then cut it into strips (I use a George Foreman Grill) then set it aside.
  2. Pop your corn (in it’s husk) in the microwave for 1 min then set aside to cool.
  3. Cut your mango into strips (get as much off as you can) and set aside.
  4. Cut up all your veg and sauté in olive oil until tender. Remove from heat. Then cut the corn kernels off it’s husk.
  5. Add the chicken and corn to the pan of veg, add the water and curry powder, stir and then simmer for 10 mins. Stir in the mango during the last 3 minutes and VOILA! It’s done.
  6. Using a spoon that allows the liquid to drain, add your filling to the tortilla wrap, wrap and enjoy.

Feel free to add other veggies that you like before wrapping.

Garlic Ground Beef/Turkey Filling

1lb of Ground Beef/Turkey
Salt and Black Pepper to Taste
1.5 Teaspoon of Cumin (Be sure to read the ingredients.)
3 Large Garlic Cloves (crush the garlic before mincing)
2 Tablespoons of Spring Onions
2 Tablespoons of Parsley
1 Stalk of Celery
1/2 Large Green Bell Pepper

  1. Cut up and sauté all your veg until tender.
  2. Add the ground beef, season with salt, black pepper and cumin (I also shake in some chili pepper flakes).
  3. Cook, stirring occasionally, until the beef is done.
  4. Drain the oil and VOILA! It’s done.
  5. Using a spoon that allows the liquid to drain, add your filling to the tortilla wrap, wrap and enjoy.

Feel free to add other veggies that you like before wrapping.

This recipe asks you to sift the flour. I don’t have a sifter so I followed the youtube video below.
